Method
- Steam or boil cauliflower florets until fork-tender, about 10 minutes. Drain well.
- Blend or mash cauliflower with 2 tbsp butter, heavy cream, and parmesan until smooth. Season with salt.
- Pat steak cubes dry and season with salt and pepper. Heat avocado oil in a skillet over high heat.
- Sear steak in batches, 2–3 minutes per side, until browned. Remove from pan.
- Reduce heat to medium, add remaining butter, garlic, and thyme. Return steak to the pan and toss to coat for 1 minute.
- Serve steak bites over cauliflower mash, topped with fresh parsley.
